Sequatchie Cove Walden - 7ozInspired by French Tomme style cheeses, "Walden" is a semi soft, natural rind cheese made from raw cows milk. Aged for 60+ days, it develops a rustic, earthy rind and a supple interior with notes of cultured butter, hay, and a touch of cellar funk. Handmade in small batches at Sequatchie Cove Creamery in the foothills of the Appalachian Mountains.

made at a heavy cost – only three casks were produced from a half-hectare

Nebbiolo and Barbera will see 1 year in large casks followed by at least 1 year in tank
